I can give you a push by saying that when they ask about "characteristics" of something, it's something that makes it special or unique. For example, a characteristic of Szechuan cooking in China is that it is normally very spicy. There's no shortage of spicy options in the region. A characteristic of Tibetan yak butter tea is that it is a little salty...and so on. So when they are asking about characteristics of traditional Caribbean food, what makes Caribbean food different from other food? Is it spicy? Do many dishes use a lot of meat or vegetables? Is it also as spicy as Szechuan chicken? One other way you can tackle this is to look up some Caribbean food and compare it to American food and notice the differences and start from there.
