I think that water changing from a liquid to a gas is the process called vaporisation. Evaporation and boiling are two ways by which vaporisation occurs. Evaporation takes place at any temperature and pressure whilst boiling takes place at fixed temperature and pressure. Also, evaporation occurs only at the surface of liquids whereas boiling occurs throughout the liquid.
