computer science today is basically all about knowing the in and out of a language like java, asp.net, php etc to name a few.
I disagree that computer science is about knowing the "ins and outs of a language"...it's more about being able to solve problems mechanically using the tools a computer gives you, and figuring out the best algorithm for each problem. A computer language is just a tool...I may know Java syntax perfectly, but if I can't use it to solve a problem, then it's useless. Knowing every English word doesn't necessarily make me a good author, for example. As for really good computer science classes online, I recommend udacity.com. I'm a CS teacher in search of good resources, and this is the most interesting one I've found thus far.
