Artificial Intelligence: A Modern Approach 3rd Edition was what we used for https://www.ai-class.com/

The book itself costs money, but resources for the book (implementations of the book peusocode in actual programming languages and stuff) can be found for free at http://aima.cs.berkeley.edu/
