Because the world is analog in nature and robots work off computers which process everything digitally. An A->D converter must convert the inputs from the outside world (video, sound, etc) into a digital representation of the data so that it can be processed. The process is reversed (D->A conversion) when the robot needs to do something externally (ie move).
