Root structures, which only plants can have, certainly tell you very little about the evolutionof animals. And a "plant-eating organism" is an animal by another (awkward) name. So that rules out the first two. The last is ruled out because completely soft-bodied organisms generally don't leave fossils. They have no hard bits -- shells or bones -- to become fossilized. So that leaves only the third, using the fossil record to compare the evolution of frogs and birds. Both frogs and birds have bones, so they would both leave fossils. The structure of their skeletons would probably tells you a lot about the organism, since both are mobile animals that need to jump, swim or fly. The fossil record would tell you how those things changed over a long time. So it would give you good insight into their evolution.
