Could I use this course to learn Cantonese and Mandarin? (Is the only difference that the characters are pronounced differently?)

No, you cannot use this course to learn Cantonese, but only to learn Mandarin.  Besides the pronunciation, there are differences in the syntax (aka grammar) and vocabulary of the two dialects.  Also bear in mind that, if you plan on learning the simplified form of the characters used in the People's Republic, Cantonese speakers from Hong Kong will be using the traditional form of the characters in their writing.
