3 pin audio jacks are for stereo connections, 2 channels of audio. So one connection is ground, one is left audio and the last is right audio. The 2 pin microphone diode will only output a single signal. 

So you would connect the anode of the diode to GND, and the cathode to either of the other pins, or both. When connected to both, the signal will pass through both channels.
