Egg white consists mostly of proteins that have sulfhydryl (-SH) groups in their structures. These groups can bind to and sequester heavy metal ions (such as Pb2+, Hg2+, etc.). This same reaction with proteins and other molecules containing -SH groups in the body is one way by which these ions are toxic.
