What makes the bread lighter in texture? A- hydrogen B- carbon dioxide C- oxygen

OpenStudy (anonymous):

Generally speaking, anything which causes air pockets in the bread will help the bread be lighter. using a simple loaf of yeast bread made with wheat based flour as an example, dough which is allowed to rise correctly (i.e. the yeast is spitting out lots of tiny bubbles of CO2 gas) will result in bread lighter in texture than dough which does not rise.
