When using APA citations, do I have to cite every thing that was said from the person being interviewedd, or can i just cite after every paragraph?

Do not quote an entire interview or even a large portion of one. Instead summarize the interview into one paragraph and cite that. Believe it or not if too much of your paper is quoted material you can get dinged for plagiarism even if you properly cite the quoted material.

I agree with jagatuba. Include highlights and excerpts from the interview (as quotes) that help to provide evidence for the arguments you are making in the paper. Quotes or portions of the interview should be framed by an explanation as to why they are important and how they support the overall argument.
