if we have more than one of the same type protein would we still call it a complex of proteins? ( just to make sure complex means more than one )?
yes it is a complex protien as more than one protien forms complex one whether same or different

There are absolutely protein complexes of different proteins. They are usually called "hetero-" complexes, as opposed to "homo-" complexes made up of all the same subunits. For example, a "homodimer" would be a dimeric - so two subunit proteins - which are the same. A "heterodimer" would again have two subunits, but "hetero" would indicate that they are different. So for example, if you were told that you were dealing with a homodecamer or a hetero-octamer, you would know exactly what you were dealing with.
