Because it is the most reactive metal.It is right. Cesium and Francium are more reactive than Lithium but the hardly come in reactions so they are ignored.

2.) The activity series is the arangement of metals in order of decreasing reactivity from top to bottom.

3.) Lithium is the most reactive metal. Gold is the least reactive metal.
