Is there a number of times you would need to perform task X in order to get a fair average of how long it takes to do?

No one can really give a set number but, if we assume the results of task X could be approximately normally distributed, then by the central limit theorem it would take approximately 30 trials to start to be reasonably close to the distribution and develop a reasonable mean value to match the mean value of a large number of trials of task X. Hope that makes some sense to you. :P
