The word sophmore means, literally 'wise fool' (soph meaning wise, more meaning fool), so being 'sophmoric' would mean that something is brilliant, but in a rather stupid way! 
It's exemplified in the sentence; the students are using a brilliant plan to do something mundane, or stupid. But still hilarious!
