This is Food Science, isn't it? 1. We should bring shortening down to room temperature before measuring it. Just let it sit out for a few minutes. 2. After you measure the shortening, you can scoop it back out of the measuring cup with a rubber spatula. (Because rubber spatulas are flexible.) I think your last sentence is a typo. It says, "For requirements less than ________ cup, use a measuring CUP." Did you mean to say "...use a measuring SPOON"? If you need to measure something that's less than 1/4 cup, you would use a measuring spoon. The spoons can measure ingredients less than 1/4 cup.
