Do I have to capitalize the word : contracting officer's representative (CORs) in the sentense: Recognition was not just limited to contracting officers, and contract specialists, but also included teams of acquisitionn professionals, including program managers and contracting officer's representatives (COTs) in the customer organizations.

No you do not capitalize 'contracting officer's representatives'. The only time you would is when those words are making up an official title. at which point it become a proper name. It is obvious from the context of the sentence that this is not the case. @lgbasallote & @Ansco : The abbreviation in parenthesis only needs to be included if AND ONLY IF the abbreviation is used later in the text AND it should only be (COR) not (CORs).
