The best book I've read on C as a beginner is The C Programming Language by Kernigham and Ritchie and C by Dissection by Al Kelley. Not sure what to suggest once you get past the beginner level, but both of those books go pretty in-depth.

C is a difficult choice for a first language.  Much of what it uses is not so much obsolete as has been made easier in other languages. But Kernigham and Ritchie's choice is one of the better ones.
