for what it is worth:
I would pick a topic that interested me, or I was curious about. 
One day is not long to prepare, so it would be good if you already know something about the topic.  If you do not, you have to research the topic.

To give the talk, many people use powerpoint to outline the topic, and put a major idea on each slide.  Even if you do not use the slides, they will help you organize your thoughts.

If you are prone to get nervous, give the talk to somebody you know before doing it in the class.  The more times you give a practice talk, the easier it gets. (Like everything!)
