I haven't the time to do this water For starters though , the electric polarity of the water molecule is very important in cohesion and surface tension, and therefor viscosity in fluids. Hydrogen bonding causes water to expand upon freezing (an unusual thing for substances), hence destroying cells in sub-freezing temperatures. The list goes way on.

Also, water has high heat capacity so that water inside animals do not evaporate easily, and act as a medium.
