well the vertex is the highest of lowest point depending on it it opens up of down and the axis of symmetry is x= the x value of the vertex

ok, so what does that mean

look at the first graph, it opens down (the U goes down). so that point which looks like (-0.5, -0.5) is the vertex and x=-0.5 is the axis of symmetry, but I am estimating because the graphs are hard to read
