How do you interpret positive or negative velocity, and positive or negative acceleration values?

The direction of positive/negative velocity/acceleration can be any direction you want it to be...you just have to stick with it throughout a problem.

Typically you'll see people choose directions similar to a Cartesian plane: positive = up or to the right...negative = down or to the left. But it's completely up to you.
