are there more fields or particles ?

I can't imagine a way to quantify fields and particles similarly in a way that we can compare magnitude. This is the categorical fallacy; similar to asking the question, "Does a Honda Civic have better mileage than applying peanut butter to bread?"

It's difficult to relate 1 particle to 1 field, though; fields are strictly speaking the properties of particle interactions.
