it does two things..
1.) it heats up the metal lid and causes it to expand so that it can open easily
2.) it also heats up the air inside the jar. the air expands and releases the partial vacuum created inside the jar when it was packed and sealed.

both this help us to open the lid easily

It might also tend to loosen the congealed jam which is on the threads of the jar/lid lol
