Is there a list of options to pick from? One of the reasons I can think of is that the Umayyads had restrictive policies towards non-Arabs. Even if you were Muslim, but were not Arab, you couldn't go too far in the administrative world of the Umayyad caliphate which didn't sit well with a lot of its subjects - especially those that converted to become Muslim.
