What about a science project in exercise physiology? or perhaps in the effects of gymnastics to improve cardiovascular function and decrease the risks for obesity, infarctation, stroke etc.. Just an idea

you could also do a project on the physics of gymnastics.  it can be as basic or complicated as you want.
