the amount of work done when a force of 1 newton is applied on a body and it displaces 1metre.

defining something is way too easy a thing.

what you have to do is just write the expression.
in this case write any expression having work or energy.

as WORK = FORCE * DISPLACEMENT.
so, just put FORCE = 1 NEWTON
DISPLACEMENT= 1metre.

on putting these in the expression, what we get is your "1 Joule!!".
