I think lemon juice is because it's so acidic. I'm not sure what curd is though...

To buffer means to maintain a certain ph level .

Buffers are used in all sorts of stuff , like anything advetized as ph balanced ( conditoner , face wash ) and its done by adding a weak acid and it's conjugate base ,that act to keep the ph in a certain range .

so wouldn't high acids balance out low acids or something...

oh but it's not strong acids but weak acids in buffers
