The magnitude of the electric field between the plates of a parallel plate capacitor is 3.2 x 10^2 N/C. How would the field magnitude differ if the plate separation were to triple?

The correct answer for this was that since the electric field is only proportional to the charge, changing r has no effect.

your answer is correct only if plates are of infinite dimensions... if they are of finite dimensions then field will decrease with increase of plate separation...
