How would the products of transcription and translation be affected if the sequence GCTATATCG was changed to GCGATATCG?

Well the question is if you need to pair it but just replace the T's with U's becuase you need to pair it twice.. ones becuase of codeing and template string and one time for mRNA. in theory a 2x paring give the same results.

It is normal that we are given the coding string... so by doing a base pair to the template string we can do a transcription and get the following mRNA: |GCG|AUA|UCG| Translation: Ala, Ile, Ser. _____________________ mRNA: |GCU|AUA|UCG| Translation: Ala, Ile, Ser. as Nincompop said nothing would happen
