why is heat produced in a conductor due to flow of electric current?

moving electrons produce resistance which results in heat production

movement of electron never produces resistance, like movement of vehicle never brings friction, it is the property. heat is produced due to the resistance wherein electron bumps up in wire and changes kinetic energy of movement in to heat energy
