I don't know the answer but common sense would tell me agriculture. There wasn't exactly a lot of money in the republic, so bankers wouldn't be huge. There wasn't much of a trade system or anything running, so merchants probably wouldn't work either. Soldiers was possible but I don't think most of them made a living as soldiers. I think agriculture. Even today, there is a lot of agriculture in texas.
