If I'm told to write the linear factorization of a polynomial, and I factor it, am I allowed to leave an (x^2-3)? Or do I have to factor that into (x-radical3)(x+radical3)?

I'm pretty sure linear means all factors have to be linear, so yes, factor into the radicals.
