Would an extraction between ether and water be a good way to separate a mixture of methylene blue and methyl red?

Yes. This takes full advantage of acid-base properties, such as pKa. It's a good way to separate compounds from one layer and get a clean separation. You will notice when you mix them that a layer will form, this is due to polarity between the molecules.
