How do you know that f(x)=x and f(x)=x^2 are both functions?

Sketch a graph and use the vertical line test. If you can draw vertical lines through the graphs and not have the vertical lines cross the graph more than once, then the graphs are those of functions. If,however, a vertical line passes through a graph more than one time, the graph does not depict a function.
