Genetic engineering is also called "genetic modification." 

In other words, 
we're changing an organism's DNA. 

In order to do that, 
we have to take an organism, 
read its DNA, 
find the part that we want to edit, 
splice the DNA (cut it apart), 
insert a new piece of DNA, 
and then glue it all back up again.
