Can you write an essay on the ironies in A Story of an Hour by Kate Chopin by starting out givig the definition of irony

I don't see why not. The entire story is based on irony. The woman is devastated when she discovers her husband was dead, but over time she had and epiphany. She found out that she was now free and could do the things she wished to do now that he was dead. But when he arrives, not dead after all, she herself dies not from happiness, but from loss. Her heart was broken that she wasn't free after all. So, I guess you could start it off by saying something like, Irony is when a certain thing is said or occurs, but it means the opposite or and is in contrast to what you at first believe. This is precisely what transpires in A Story Of An Hour.... From there you can get into the story pretty easily. :) Good luck.
