To find the stem, you remove the -ar, -er, or -ir at the end of the verb. If you conjugate the verb by changing anything within the stem, then it is stem changing. For instance, for comenzar, you conjugate to comienzo for the first person present tense, so you change the e in the stem to ie and hence it is stem changing.

ustedes/ellas/ellos comen

Notice had the stem "com" always stayed the same while being conjugated? That means it's a not a stem-changing verb.
