why gravitational effects are not considered in α-particle scattering experiment ?

for gravitation to cause any effect, you need substantial mass! mass of earth, fine is large by the mass of alpha particles is so small that the mass of earth is not enough to make any substantial difference. use \(W_\alpha=m_\alpha g\) = weight to check.

by gravitation, I mean the "gravitational field"

same thing. use the gravitational potential energy instead of weight :) then compare it with the kinetic energy of the particles.
