can someone tell me why there isn't a horizontal asymptote with (x^2 - 9)/(x - 2)?

the degree of the numerator is 2 the degree of the numerator is 1

because the degree of the numerator is larger than the degree of the denominator, you will have an oblique asymptote in place of a horizontal asymptote

the reason why is because polynomial long division leaves you with a quotient of some linear polynomial (that's NOT a horizontal line)
