Water is necessary for all life.
If you don't drink enough water you'll get dehydrated and eventually die.
Without water you can't grow food like crops, fruits etc. Also animals need water too so no water = no meat.
Water is also used for hygienic purposes like washing.

Pollution renders water unsuitable for use, and that equals water shortage when there's not much water available.
