Cold and humid. When the humid air rises (warm air always rises) and meets with the colder air up top, the warm mass of air starts to slow down and become more liquid because the cold conditions cause the vapor to not be as excited. Also, humidity is basically evaporated water, and if the evaporated water did not meet with colder air as it rose, it would not be able to cause the thunderstorm because it won't have the cold air to slow it down in the right part of the atmosphere.
