Scientific models are all we ever use. It's functionally impossible to describe a real-life system mathematically because there are tons and tons of little tiny factors that make it way too complicated. Instead, you simplify the system until it can be reasonably described with mathematics and then you use the model to predict how the real life system behaves. Further study allows you to make more and more sophisticated models that more closely reflect the real-life behavior of your system.
