find the x intercepts and the y intercepts to sketch a graph for this: x +y = 3. Please show working out... I am confused.

Pleas use this method: to find y-intercept put x=0 and to find x-intercepts put y=0

it is a line, and we find the intercepts by letting the other variable be 0. so let x = 0 and you have the point (0,3) as 3 will be your y value, then make y = 0 and you get the point (3,0) as 3 will be the value for x when y = 0 so now graph the two points (3,0) and (0,3) then draw a line through them.
