Describe the color changes that the cabbage extract would undergo if the pH is gradually changed from 1 to 14?

My guess is a darker colour? Such as dark brown possibly. That's my guess. I'm going to argue that because I am thinking of fruits and vegetables. For instance, avocado can be kept a bit more green for a longer period of time by keeping it away from air and adding lemon. And lemon is acidic. Therefore, with the air and other molecules probably taking the pH of avocado to a slightly more basic value, it turns brown. I'm not sure if thats true for your experiment but that's my guess.
