The animal makes their own hormones hence "No ADDED Hormones" makes perfect sense unless you've failed biology. The term "Certified Organic" is a certification process that costs the farmer a lot of money, a limited number of artificial products and treatments are allowed under the certification and the cost of the certification has resulted in mostly large farms being certified. The smaller producers have now adopted unofficial labeling such as "Farm Fresh" or "Free". Even with the "Organic" label, there is no guarantee of absolutely no artificial additives as some additives are listed as allowed in the certification so you're just as likely to get what you want from the alternative labels as you would from "Certified Organic". Check the farmer's markets, I know ranchers who sell the met from cows that required no antibiotics at the farmer's market and sell the ones that did require treatments to the distributors, bypassing the distributors is the best way of avoiding additives. Note many butchers also spray the cuts with sodium acetate so that they retain the freshly cut red color instead of browning almost immediately.
