why does it take 3 medians to create a centroid?

It actually takes only 2 medians to find the centroid. The third median, drawn from the vertex of the opposite angle, is automatically going to go through the centroid, found from any 2 medians drawn.

If you draw only one, you still have to find where along that median is the point you want. Until you draw that second median, it could be anywhere along that median.
