which is the most suitable phase to harvest microbial cells and why?

It depends on what your intended use for the culture is. If you intend on transfering the microbial culture then the exponential phase is most preferable, however if you intend on obtaining various products from the microbial culture its more preferable to harvest them during the late stationary phase.
