I don't know. I just need some math courses on my schedule and it doesn't really matter what I take because I'll get an A in it regardless, but I don't wanna be bored.

number theory can be challenging, and it is super fun.

OR mathematics is fairly straight-forward, getting into some Queue-theory and likely some simulation and quality control analysis. Some fairly practical stuff. You can do a lot worse in terms of practical applications. Number theory and Real Variables would be fun and challenging.
