Heating water up for a long time will cause evaporation, see diagram below. The water H2O molecules are becoming more spaced out from each other as intermolecular bonds which held them are breaking due to the heat energy. The water molecules are not changing themselves, so this is not considered a chemical change, but a phase change- a change in form only.
